Edge Hill celebrates Commonwealth Day
Part of this ongoing support involves hosting regular events with and for the University's international students. On March 8, Edge Hill University’s International Office celebrated Commonwealth Day, which this year was themed ‘Science, Technology and Society’. The Commonwealth is a voluntary association of 54 countries comprising member states from Africa, Asia, the Americas, the Caribbean, Europe and the South Pacific. The International Office paid its respects to the countries of the Commonwealth and its diversity by hosting a dinner for students, staff and members of the community in the University's on-campus restaurant. The menu featured a selection of delicious dishes from some of the international students’ home countries, including spring rolls from Singapore and chicken soup from Nigeria (the recipe was donated by an MBA student from Nigeria). This was followed by Lancashire hot pot, buffalo chicken chilli from Canada, a spicy vegetable curry from India and a vegetable casserole from Uganda, and was rounded off with Liverpool tart and spiced banana bread and butter pudding from Jamaica.
